Eggs Benedict is a classic dish that consists of poached eggs resting on peameal bacon or ham, set atop an English muffin, and smothered in buttery hollandaise sauce.

Retired Wall Street stockbroker Lemuel Benedict is believed to have invented the “Benny.” In 1984, to cure his hangover, Benedict stumbled into New York’s famous Waldorf Hotel and ordered toast, poached eggs, bacon and a shot of hollandaise.

The maître d'hôtel decided the dish was delicious, and refined the recipe by introducing ham and English muffins. Today, eggs Benedicts can feature a range of flavours by swapping out ham for smoked salmon, steamed spinach or other ingredients.
